ELDERFLOWER SYRUP



In may, along with roses and peonies, also blossoms the eldertree. The elderflowers make a delicious tea, but they make an even better refreshing drink. I usually leave some of the blossoms in the freezer, so I can make the syrup in winter as well.
You will need:
3 l water
4 kg sugar
6 lemons
1 citric acid (or 1 teaspoon per 1 l of water)
30 elderflower blossoms
- Boil water and sugar and let it cool.
- Add the blossoms into the cooled down sugar-water. Squeeze in the lemons, add the citric acid and mix it all together.
- Soak the mixture for 48 hours. Mix it every now and then.
- Strain it and pour it into the bottles.
- When it gets really hot in the summer, I add freshly squeezed lemon juice into the already prepared drink.
